We were delighted to welcome the RTÉ Team to Beara recently to film the piece for the Programme. They were very impressed with the beautiful scenery here and even more impressed with our sea salt facility and how we harvest our Irish sea salt flakes.

It should be an interesting piece, so make sure you’re in the comfy chair, with a cuppa in hand for this one!

We’ve all been there, you’re standing in your kitchen, gazing dejectedly at the piece of meat you have for this evening’s meal. You’re all out of ideas to add flavour …Image

We’ve come up with a simple recipe for a spice rub that is sure to ‘wake up’ beef, chicken or the ever-dependable pork chop. Rub this into your piece of meat before cooking to add that extra ‘oomph’ .

Ingredients:

  • 2 tbsp O’ Neill’s Irish Atlantic Sea Salt (Try either our Plain Sea Salt or the Chilli & Paprika flavoured Sea Salt for an extra kick) Chilli & Paprika
  • 1 1/2 tbsp Brown Sugar
  • 1 tbsp Sweet Paprika
  • 1/2 tbsp Cayenne Pepper

Note: The above makes enough spice rub for one whole chicken.IMG_0164

Method:

1. Mix all ingredients together and rub into your meat. Depending on the type of meat, score the fat of the meat first then apply the rub.

2. Cook as normal.

 Michael and Aileen O’Neill of Irish Atlantic Salt Ltd.  are celebrating the news that their Irish sea salt products have wowed judges in Great Taste 2013 by being awarded four awards in the world’s largest and most rigorous food awards scheme which involves over 400 judges and thousands of hours of blind tasting. The O’Neills harvest Ireland’s only sea salt flakes at their home on the stunningly beautiful Beara Peninsula in West Cork. The Peninsula, which stretches out to the wild Atlantic, is surrounded by Grade A quality sea water and provides the perfect backdrop for the O’Neills to produce their Irish Atlantic Sea Salt Flakes.

The small company originates from very humble beginnings, around the O’Neill’s kitchen table in fact, and has grown significantly since forming in 2010. This year, the company launched a new range of flavour infused Irish sea salt flakes, incorporating some amazing flavours with their 100% natural Irish sea salt flakes. The O’Neill’s are dedicated to quality and this phenomenal win at the Great Taste Awards is testament to this dedication. Four products from the O’Neill’s new range were selected as Great Taste winners  – a hugely important accolade for any food producer. The Great Taste Awards identify and promote the very best in specialty food and drink from the U.K. and Ireland. Almost 10,000 products were submitted into the competition this year, with 25% of these from Irish producers. Great Taste is simply about taste, not clever branding or smart packaging.  Judges are presented with, for example, a piece of cheese, a pie or a little dish of chutney, with no wrappings, jars or marks – and they taste, confer and re-taste before making the decision on whether a product should be Great Taste winner.  In total more than 12 judges will have tasted and commented on each product.

” We were hoping the quality of our Irish salt products would be recognised at this year’s Great Taste Awards but we hadn’t expected them to be quite so successful. We now have five Great Taste Awards to be very proud of and we cannot wait to get those important logos onto our packs. We’ve been on the road a lot lately at different promotional events. The fabulous Kenmare Food Carnival kick started a month of tastings and demos for the Irish Atlantic Salt Team. We were at the Eyeries Family Festival where we met with Paul Flynn and last week we were doing tastings in Tesco stores in Dublin! This week we’re off to Waterford to do tastings in Tesco stores there.

We love getting out and meeting our customers (and converting new ones). What has really surprised us is how much our customers love to tell us how they use our sea salt flakes.  It’s amazing to think that our sea salt flakes end up in kitchens all across the country and our customers seem to LOVE experimenting with them…

One lady told us she uses our new Chilli and Paprika sea salt flakes on toasted cheese sandwiches,  totally transforming the ever dependable toastie!

Another dedicated user told us how he uses our plain salt flakes when roasting chicken to give the skin extra crispiness. Apparently, no other sea salt flakes give the same crispiness and taste.

And did you know that our Garlic sea salt flakes are great for giving dips and sauces an extra kick?! Our Garlic Sea Salt blended with mayonnaise is delicious and it definitely adds great flavour to an otherwise boring sauce.

So even though we are on the road telling our Irish Atlantic Sea Salt story, it seems our customers love telling us their Irish Atlantic Sea Salt story too!

The Stuffed Olive

Butterbean, Chorizo & Cabbage Soup, Roasted Red Pepper Paté, Aubergine Chickpea and Mushroom Tagine…at last, The Stuffed Olive has re-opened!

I cannot tell you how delighted I was to step into the newly re-opened Stuffed Olive in Bantry last week.

Stuffed Olive 9Owner, Trish Messom and her daughters, Grace and Sarah have re-opened the amazing haven for foodies in their new premises on Bridge Street in Bantry. I think I speak for every food lover in the West Cork area when I say it is such a pleasure to see this place open again.

On walking into the new Stuffed Olive, the smell of fresh coffee, coupled with a warm welcome from Bernie was enough for me! Already, I loved the atmosphere in this place – small, yet airy, cosy and bright. The staff are extremely friendly and could not have been more helpful. I spoke with Bernie who told me about the re-open. Her enthusiasm for the place was contagious – which says a lot!

The Stuffed Olive is full of wonderful local Irish produce, chocolate, coffee, juices, chutneys, jams, olive oils, cakes, cookies, crackers, sauces, marinades… you name it.

Trish owns and runs The Stuffed Olive with her two daughters, Grace & Sarah. Raised on a farm in West Cork and the youngest of 14 children, it is no wonder Trish has a deep appreciation and respect for good, simple food. “I love food and what can be done from a few simple ingredients and if at all possible I use only Irish products and no shortcuts.”

Everything in The Stuffed Olive is freshly made by Trish and her daughters, hence her 4am start! Trish is so enthusiastic about the products she stocks and the food that she produces. I was really impressed with her selection of salads and she even has a lot of flour free delights such as lemon polenta cake, seriously rich chocolate cake and Moroccan orange cake, (celiacs, breathe a sigh of relief).

I left TStuffed Olive 1he Stuffed Olive with a warm fuzzy feeling having met the ladies behind it all, or maybe it was the lovely coffee from Cork Coffee Roasters I was holding… the Rebel City Espresso Blend, like!

An ocean of opportunity for Ireland’s only sea salt producers

Image Since launching their Irish salt company in 2010, Michael and Aileen O’Neill of Irish Atlantic Salt Ltd. have worked tirelessly to transform their kitchen table enterprise into an award winning, innovative food company with high export potential. Having secured listings recently with Irish multiples such as Tesco and Dunnes Stores, the couple have set their sights high and are now beginning to service valuable markets overseas such as the US, Germany, the UK, France and Italy.

Michael and Aileen produce their signature Irish salt flakes from the pristine seawaters of the wild Atlantic that surround their home on the Beara Peninsula in West Cork. The O’Neills, with the help of their local Enterprise Board, have developed a purpose built salt production facility which is located alongside their home in Beara. Here, they produce Ireland’s only gourmet sea salt flakes.  

The couple began experimenting with sea salt production in 2009 and after a long and tedious period of trial and error, they finally mastered their technique for creating brilliantly white and 100% natural sea salt flakes in 2010. The process is extremely innovative and blends age old artisan salt making techniques with energy efficient technologies.

Having recognised a gap in the market for high quality flavoured Irish sea salt, the O’Neills have now launched their new range of flavour infused Irish sea salt flakes. This new artisan range includes: Oak Smoked, Chilli & Paprika, Lemon & Pepper, Aromatic Garlic and Aran Dillisk (seaweed from the Aran Islands). The new range is now available to buy in select Tesco, Dunnes Stores, Superquinn, Super Valu and Centra stores.

Get BBQ-ing with our Chilli and Paprika infused Sea Salt Flakes

What is it about this sunny weather that makes you want dust off the BBQ, pop down to the local butchers for some of his finest cuts and invite the crew around to shake things up in the back garden?

Our fabulous Chilli and Paprika infused Sea Salt Flakes hit selected Tesco stores recently and to get you into the spirit, we’ve got this lovely recipe for Lime and Chilli Chicken especially for your BBQ this evening. So no excuses, pop to one of these Tesco Stores, pick up some of our fabulously fiery Chilli and Paprika Sea Salt and get cooking…

Lime and Chilli Chicken Wings

Ingredients:

1KG  chicken wings (or thighs)

4 limes

1 tsp brown sugar

2-3 tsp Irish Atlantic Sea Salt Flakes infused with Chilli & Paprika

Method:

1. Squeeze 4 fresh limes. Add the Chilli & Paprika Sea Salt and the brown sugar and blend into a paste.

2. Smother the chicken wings with the marinade and leave for 3-4 hours.

3. Once the BBQ (or oven) is ready, wrap the chicken pieces in individual tin foil pouches, adding 2-3 tbsp of cold water to each. Pop on the BBQ and cook for approx. 40 minutes.

Delicious served with BBQ-ed vegetable skewers or fresh potato salad.

A match made in heaven

Irish potatoes and Irish sea salt…it’s a match made in heaven.

You may have seen this week that Keogh’s,the Irish crisp gourmands, have launched their Lightly Salted crisp with O’Neill’s Irish Atlantic Sea Salt. The new crisps have ‘Just a Pinch’ of our pure Irish sea salt flakes and let me tell you, they taste amazing!

We are thrilled to work with Keogh’s Farm, another artisan Irish company that shares our commitment to quality, taste and keeping it Irish…and to top it off, they’re an unbelievably friendly bunch!

Tom and Ross Keogh made the long trek (five hours) from North County Dublin down to the Beara Peninsula this week to launch the new crisps with us (you’ll be happy to know, they came with a car full of crisps). Luckily, the sun was shining for our visitors and we got some beautiful shots at Lehanebeg Pier, a small pier close to us here in Cahermore.

We also took some great shots at Dursey Sound, where Ireland’s only cable car takes visitors and locals from the mainland out to the beautiful Dursey Island. Next stop from here, New York!
