Come Dine With Me…I am now a Masterchef!

Brushing up on your culinary skills now sits somewhere between your kettle bells class and aqua aerobics. Cookery classes have gained a new position in people’s priorities as we become more passionate about our food and more confident in exploring and testing our culinary skills. Our desire to know more and do more with our ingredients has resulted in a growing trend in Ireland in the popularity of cookery classes. Considering the abundance of fabulous cookery schools dotted across the country, is it any wonder more and more of us are donning the apron and getting stuck in!

Unable to boil an egg? Fear not, because there is a cookery class out there for every one! Much like Women Only Gyms, some cookery schools now offer Men Only Cookery Classes! Or, if you are single and fancy making sourdough with a potential date, you can take a Singles Only Cookery Class. Hen parties, corporate gatherings, team building sessions, kiddies classes, foraging, Asian, French, Spanish, Italian, Gluten-free –  the list is endless!

Embracing the growing trend in this popularity of cookery classes are Shane and Nicola Donohue who recently opened their cookery school, Recipe4Success in Limerick. Catering for almost all tastes and all levels of ability, Recipe4Success offers a range of classes, from Entertaining at Home, Seafood Flavours, Easy Week Day Meals, Simple Tapas to a Men Only (Hands-On) class.

Shane recently created this mouth – watering piece of heaven and was kind enough to send us his recipe.

Chocolate Mousse with Pistachio and Irish Atlantic Sea Salt

Preparation time: 15 minutes  Chilling time: 3 hours   Serves: 4

Ingredients

265g milk chocolate

4 egg whites

310ml cream

80g caster sugar

Irish Atlantic Sea salt

Extra virgin olive oil

2 tablespoons of crushed pistachio nuts

Method

1. Put the cream into a bowl and whisk until the consistency of yoghurt.

2. Take a pot put some water into it and put on a medium heat. Place a glass bowl on top of the pot and place the chocolate in to melt. Once melted set aside

3. Take a bowl and place the whisked egg whites in it. Whisk the egg whites until they reach the consistency of stiff peaks. Add in the sugar and continue to whisk for 20 seconds.

4. Next add the egg whites into the cool melted chocolate and mix. Fold in the cream to the egg white/chocolate mixture and mix gently.

5. Cover the mixture with cling-film and place in the fridge for a minimum of 3 hours.

6. After a minimum of 3 hours remove from the fridge. Take a spoonful and put it on a plate. Sprinkle some of the crushed nuts on the chocolate mixture and around the plate. Add a small sprinkle of Irish Atlantic Sea Salt on top of the chocolate and finally add a drizzle of olive oil.
